2 lbs. Salmon steaks 2 cups italian dressing 2 tablespoons lemon
juice 2 teaspoons salt 1/4 teaspoon pepper paprika
Thaw frozen steaks. cut into serving size portions and place single layer in
shallow baking dish. Combine remaining ingredients except paprika. Pour
sauce over fish and let stand for 30 min., turning once. Remove fish, place in
well greased hinged wire grills. Sprinkle with paprika. Cook about 4 inches
from med hot coals for about 8 min. Baste with remaining sauce and sprinkle
with paprika. Turn and cook for 7 to 10 min. longer or untill fish flakes eaily
when tested with fork. serves about 6
3 Tbs. Catsup 4 Tbs. White Vinegar
2 Tbs. Vegetable Oil 2 Tbs. Salt
Clean and cut Salmon into size wanted. Pack into cleaned quart jars. Pour the
above mixture over fish and Seal with standard canning lids. Cooked for 90
minutes in a pressure cooker at 15# pressure. Note do not fill jars to the top
the oil will keep the lids from sealing. Also, when canning be sure to cook the
full 90 minutes at 15# P.S.I. this time and temperature will ensure the killing
of any common bacterial. You can also can with out the mixture, just be sure
to pack the jars tight but leave about an inch of space on the top of the jar.
the fish will make it's own juices
1 bowl flour
1 bowl beaten eggs
1 bowl cracker crumbs, seasoned to taste
fillet salmon and rinse in water, pat dry. Cut fillet into sections about 2" by 3".
Roll each piece into the flour, then eggs and then into seasoned cracker crumbs.
Place in hot grease or oil and fry. It fries fast, so dont overcook.
ITALIAN STYLE SALMON STEAKS
1 pound Salmon fillet -- boned/skinned 1/2 cup Dry white wine
1/4 cup Fine W/W breadcrumbs Non-stick cooking spray
1/2 cup Dried basil 4 Lettuce leaves 1 cup Chopped tomatoes
Cut salmon into 1" strips. Soak salmon strips in a shallow dish with wine for 1
hour, turning once. Drain. Roll salmon finger in breadcrumbs. Spray a gill rack
and place it on a grid over ashen-hot coals. Scatter rinsed and drained basil
over coals. Grill salmon, turning once with a long-handled spatula. Grill fish
about 4 minutes on each side or until it is done to taste. Salmon will flake
easily when tested with a fork. To serve, place salmon fingers on a salad plate
over lettuce leaves. Spoon on chopped tomatoes next to the salmon. Serve hot

1/2 cup Cracker crumbs (butter flav) 1/2 teaspoon Paprika

In 12x8x2 inch dish, arrange fillets with thickest meat areas to outside
edges of dish. Sprinkle with salt and pepper then other ingredients.
Microwave at HIGH 9-11 minutes, rotating dish 1/2 turn after 5 minutes, until
fish flakes easily with fork. Serves 4.
MICROWAVE LEMON BUTTER FILLETS
GRILLED SALMON STEAKS
Cut Salmon into steaks about 3/4 " to 1" thick. Soak in cold water for 20 min
or more. Heat up grill and spray with vegetable oil. Sprinkle salmon with lemon
juice. You can also add seasoning salt, or paprika if you like. Grill steaks on a
med heat for 5 to 6 min on each side or untill done. Add to you favorite dish, or
top with salsa or lemon slices.
